The FeedFeed Buffalo Mac & Cheese
Ingredients:
CHICKEN
1 cup shredded or sliced cooked chicken
2 tablespoons buffalo sauce
MAC AND CHEESE
1 box Annies cheddar shells
TOPPING
¼ cup cheddar shredded cheese
¼ cup blue cheese crumbles
1 Tablespoon buffalo sauce
1 Tablespoon ranch dressing ( to drizzle on top)
1/4c crushed up Annie’s cheddar bunny crackers
Instructions:
Preheat oven to 350°F
CHICKEN
Mix chicken and buffalo sauce in a medium bowl, set aside.
MAC AND CHEESE
In a sauce pan boil 6c water over high heat.
Stir in pasta and cook for 8-10mins or until pasta is done, occasionally stirring.
Drain pasta in a colander. While pasta is draining add in the sauce pan 3tbsp milk of your choice ( I used almond milk).
Next sprinkle in the cheese and mix into the heated milk.
Add cooked pasta back into the cheese sauce in the pan and mix well.
Add the chicken in to combine
TOPPING
In an oven safe skillet add the combined mac and cheese and chicken mixture.
Top with cheddar cheese, blue cheese crumbs, and crushed up annies cheddar bunny crackers and bake, uncovered, for 5 minutes.
Then set the oven to broil and let it broil for 3-5 minutes, Be sure to check it. You want the cracker crumbs to be slightly browned.
